Cereal Bars

In the pictured cereal bars I used pecans and walnuts and roughly chopped them. You can use any nuts you have and also try adding dried fruit too. This really is a 'throw it all in' recipe.

  Cooking temperature: 160°C

Makes/Serves: bars

Ingredients

  • 150 g Chopped nuts
  • 50 g Chocolate chips
  • 175 g Oats
  • 50 g Rice Krispies
  • 10 g Chia seeds
  • 10 g Pumpkin seeds
  • 2 teaspoons Ginger
  • 10 g Caster Sugar
  • 2 Eggs
  • 1 Banana
  • 15 ml Maple syrup


Method

  1. Measure the dry ingredients into large mixing bowl and stir together.
  2. In a smaller bowl, mash the banana and then beat in the egg and maple syrup.
  3. Add the wet ingredients to the dry ingredients and combine.
  4. Tip into a mini loaf pan and press down. It will look like there's too much to start with, but once you press it all down it goes in.
  5. Bake for 20 mins at 160°C

I wrap these individually and put them in the freezer so you can grab one to take for an on-the-go snack.
