Tzatziki

Ingredients

  • 60 g Greek Yoghurt
  • 0.25 Small Cucumber
  • 0.25 teaspoon Garlic Puree
  • 1 tablespoon Chopped Mint
  • 0.25 teaspoon Salt


Method

  1. Grate the cucumber, and then sprinkle the salt over it.
  2. You need to squeeze out as much juice from the cucumber as you can. Wrap it in a clean tea towel or a piece of kitchen roll and wring it out.
  3. Combine the squeezed cucumber with the yoghurt, garlic puree and herbs and stir together.
  4. Taste and add more salt if you think it needs it.

Recipe Tips

If, like me, you aren't all that keen on mint, or don't have any to hand then you can use chives instead.

A larger cucumber might need the seeds and the watery bit in the middle removing before you start.
