Crustless Air Fryer Pizza Quiche

I make these in XL silicone muffin cases. They are easily transportable and can be eaten straight out the case, so are perfect for a packed lunch. You can also make them in a mini flan tin or springform pan, but make sure it's water tight otherwise it will leak out everywhere - I speak from experience! If making them in something that you won't be serving it in, then grease the dish first to make it easier to get out neatly.

Makes/Serves: individual pizza quiche

Ingredients

  • 40 g Cheddar Cheese
  • 1 Egg
  • 1 tablespoon Milk
  • 1 handful Basil Leaves
  • 3 Cherry Tomatoes
  • 3 Pepperoni Pieces


Method

  1. Beat the egg, then mix in the cheese and milk and add a bit of seasoning.
  2. Tear up the basil leaves and mix in.
  3. Tip into the tin/case. Half the tomatoes and arrange these on the top with the pepperoni. Add a sprinkle of grated mozzarella if you wish.
  4. Cook in the air fryer at 150°C for about half an hour. Keep an eye on it as appliances can vary. It will puff up a bit like a soufflĂ© while cooking but then deflate again as it cools.

You might find that the toppings sink in and it doesn't look much like a pizza, but it will still be tasty.

You can make these in a conventional oven and sometimes I do this if I happen to have it on for cooking something else. I find that using the oven takes a little longer than the air fryer, so bear this in mind.
