Hot Aubergine And Bacon Pasta Sauce

Ingredients
- 2 tablespoons Extra Virgin Olive Oil
- 1 Aubergine
- 8 Rashers Streaky Bacon
- 2 cloves Garlic
- 0.25 teaspoon Hot Chilli Powder
- 2 tins Chopped Tomatoes
- 2 teaspoons Balsamic Vinegar
Method
- Cut the aubergine into cubes and chop up the bacon.
- Heat the oil in a large pan and add the aubergine along with plenty of salt. Cook for about 8 mins, until it is soft.
- Add the bacon. Once the bacon is cooked, add crushed garlic and the chilli powder and let these cook for a minute.
- Add the tomatoes and balsamic vinegar and cook for 10 minutes without a lid. Stir regularly.
- Once the sauce has thickened, serve with pasta.
