Courgette And Bean Crustless Quiche

Four small portions = one small quiche which I make in a small pie dish, probably about 18cm in diameter. A use a medium sized courgette, or two small ones if they are picked early. Don't worry about the weight, you don't need to be too precise with this recipe.

Makes/Serves: small portions

Ingredients

  • 3 Eggs
  • 1 Courgette
  • 100 g Cheddar Cheese
  • 100 g Green Beans


Method

  1. Grease the pie dish so it's ready.
  2. Grate the courgette and squeeze out any excess moisture from it (wrap it in a clean tea-towel to do this).
  3. Grate the cheese.
  4. Chop up the beans into pea-sized pieces. Chop any other fillings you wish to add.
  5. Beat the eggs in a large bowl and add some salt and pepper.
  6. Stir in the chopped fillings.
  7. Tip into the pie dish and add some extra grated cheese on the top (optional).
  8. Bake for about 35 mins.

This is quite a versatile recipe, you can try with all sorts of fillings, so it's great for using up what you've got. Add some ham or bacon. Add some herbs. Swap half the cheese for feta chunks. Or add any other veggies you have.
