Crustless Quiche

4 small portions = 1 small quiche. I have a little pie dish, probably about 18cm which I use for a 4-egg amount. If you scale up or down, then the cooking time will need to be adjusted. A larger the quiche will take longer to cook and you might also need to lower the temperature to prevent it browning too much.

Makes/Serves: Small portions

Ingredients

  • 4 Eggs
  • 100 ml Milk
  • 80 g Cheddar Cheese
  • 80 g Ham
  • 2 Spring Onions


Method

  1. Grate the cheese and chop up the ham and onion (or whatever fillings you have chosen).
  2. Grease your pie dish so it is ready.
  3. Put the eggs in a large bowl and beat them. Add the milk and a little salt and pepper and beat together.
  4. Put about three quarters of the chopped fillings into the pie dish.
  5. Tip the egg mixture over and then sprinkle the remaining filling on the top.
  6. Bake for 35 mins.

Try different fillings as there are endless combinations of flavours that will work with this recipe.

You can enrich this recipe by using cream instead of milk. Also try adding some extra grated cheese on the top.
