Pickled Gooseberries

Makes/Serves: jar

Ingredients

  • 200 g Gooseberries
  • 150 ml White wine vinegar
  • 25 g Caster Sugar
  • 1 teaspoon Ginger
  • 0.5 teaspoon Cinnamon
  • 1 pinch Cloves


Method

  1. Top and tail the gooseberries.
  2. Sterilise your jar and put the gooseberries in it.
  3. Put the vinegar, sugar and spices in a saucepan and bring to the boil.
  4. Tip into the jar, ensuring that all the gooseberries are covered.
  5. Tighten the lids while the jars are still hot.
  6. Leave for a few weeks to mature.
