Method
- Roast the walnuts for about 8 mins and then finely chop them.
- Get your cupcake cases laid out ready before you start mixing.
- Put the flour, baking powder, sugar, butter and eggs in a bowl and mix together with an electric mixer.
- Fold in the coffee and walnuts.
- Divide the mixture between the cupcake cases.
- Bake for about 17 mins.
