Gluten Free Toffee Apple Cupcakes

Ingredients

  • 175 g Gluten Free Self Raising Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Xanthan Gum
  • 1 teaspoon Vanilla Extract
  • 110 g Caster Sugar
  • 110 g Margarine
  • 2 Eggs
  • 2 Eating Apples
  • 1 batch Toffee Butter Icing


Method

  1. Measure the flour, baking powder and xanthan gum into a bowl and stir together with a whisk to make sure they are thoroughly mixed.
  2. In a separate bowl beat the sugar and margarine.
  3. Beat in the eggs and vanilla extract.
  4. Fold in the flour mix. You will have a thick batter which can rest while you get the apples ready.
  5. Peel and core the apples and chop them up into really small pieces. Mix into the cake batter.
  6. Put the cake batter into your cupcake cases. You can fill them right to the top as they don't rise much.
  7. Bake at 150°C for about half an hour.
  8. Let them cool before making the icing.
