Peanut Butter Flapjacks

A quick recipe idea for using up over-ripe banana. If you want more fruitiness, add some dried fruit in there too! I'd recommend using a good quality peanut butter that doesn't have any added sugar.

If you use a square dish to bake this in, then it will cut into 16 delicate slices, or 9 generous portions.

  Cooking temperature: 190°C

Makes/Serves: 8 inch square tray

Ingredients

  • 150 g Peanut butter
  • 130 g Golden Syrup
  • 250 g Oats
  • 1 Banana


Method

  1. Grease the tray and get the oven on to heat up first.
  2. Put the peanut butter and golden syrup into a saucepan and gently melt them together.
  3. Mash the banana and stir that into the syrup, then add the oats.
  4. Mix together thoroughly and then press into the tray and bake for 15 mins.

I poured 150g of melted chocolate on top which finished these off perfectly.
