Scones
My basic scone recipe is easy and adaptable, you can add flavours such as dried fruit, spices or cheese to your own to taste. If you are making a savoury scone, leave out the sugar. If you can get buttermilk, use this instead of ordinary milk.

Cooking temperature: 220°C
Ingredients
250 g Plain Flour
1 tablespoon Baking Powder
50 g Butter
25 g Caster Sugar
150 ml Milk
Method
Begin by setting the oven really hot - 220°C or gas Mk 7.
Sift the flour into a roomy bowl, add the baking powder and butter and mix all together until they form a crumbly texture.
Add the sugar and/or other flavourings.
Gradually work in the milk mixing gently with a knife.
Bring the mixture together with your hands - it should be soft but not sticky.
Shape the dough into a round on a board and then roll out to a circle 2.5 cm thick and cut out your scones with a 5 cm round cutter.
Place on a floured baking tray and dust with a little flour. Bake for 7-10 minutes until well risen and golden brown.
Serve while still warm with butter and fresh jam.
