Method
- Take the butter out of the fridge to soften beforehand. Line some baking trays with parchment paper.
- Beat the butter and sugar until soft and fluffy.
- Beat in the egg yolks.
- Mix in the vanilla extract, followed by the flour.
- Mix in the milk and then use your hands to bring it together to a soft dough. Add a little extra milk if required.
- Roll out to about 5mm thick and cut out using whatever cookie cutter shape you wish.
- Place the biscuits on the lined baking trays and bake them for 15-20 mins. They will be a pale golden brown when done.
Variations
You can use cinnamon and mixed spice instead of vanilla for a more festive flavour.
