Gluten Free Chocolate Orange Brioche

Makes/Serves: 2lb loaf

Ingredients

  • 1 sachet Fast Action Dried Yeast
  • 220 ml Warm Water
  • 45 g Caster Sugar
  • 400 g Gluten Free Bread Flour
  • 1 teaspoon Xanthan Gum
  • 2 teaspoons Baking Powder
  • 50 g Butter
  • 0.25 teaspoon Salt
  • 1 Orange
  • 3 Eggs
  • 75 g Chocolate chips


Method

  1. Get the butter out of the fridge to soften before you start.
  2. Line a 2lb loaf tin ready.
  3. Put the yeast, sugar and warm water in a jug and leave for just over 10 minutes until it's gone frothy.
  4. Combine the flour, xanthan gum and baking powder.
  5. Zest and juice the orange.
  6. Put everything, except the chocolate chips into a food processor and blend until smooth.
  7. Fold in the chocolate chips.
  8. Tip into the loaf pan and leave in a warm place for about an hour to an hour and a half.
  9. Bake at 180°C for 40-50 minutes.

If you don't have a fresh orange, half a teaspoon of orange extract works just as well.

If you have no gluten free bread flour, or want to have a go at blending your own, here's how you make 400g. Mixing 260g rice flour, 70g tapioca flour, 70g potato flour and 2 teaspoons xanthan gum. Simples.
