Potato Salad
Use potatoes that have already been boiled and cooled down. Perfect for using up leftovers from the day before!
Ingredients
- 10 Salad Potatoes
- 1 Shallot
- 1 tablespoon Cornichons
- 1 tablespoon Chopped Parsley
- 2 tablespoons Mayonnaise
- 0.5 tablespoon Extra Virgin Olive Oil
- 0.25 teaspoon White Wine Vinegar
Method
- Cut the potatoes up into bitesize chunks. Finely chop the shallot, cornichons and parsley. Use a large bowl to mix all the chopped ingredients together.
- Add the mayonnaise and mix together.
- Use a ramekin to whisk together the olive oil and vinegar so it combines. Drizzle over the potato salad and mix again.
