Rocky Road Christmas Puddings
I have some spherical silicone moulds which I used for this and they are very easy to get out. The quantities below actually made 13 puddings - so you get to sample one and make sure it's ok before serving it! You can make one large pudding by using a large bowl, just make sure you line it with cling film to make it easier to get out.
Ingredients
- 120 g Golden Syrup
- 120 g Butter
- 400 g Dark Chocolate
- 50 g Mini marshmallows
- 10 Digestive Biscuits
- 50 g Glace Cherries
- 50 g Honeycomb pieces
- 100 g Marzipan
- 100 g White Chocolate
Method
- Break up the biscuits into pieces and cut the cherries in to halves or quarters - make all the pieces about the same size as the marshmallows. Put all this aside for later.
- Break up the dark chocolate into pieces.
- Put the golden syrup and butter into a saucepan and heat gently until it's melted.
- Take off the heat and stir in the chocolate until it's all melted.
- Mix in the marshmallows, cherries, biscuit pieces and honeycomb.
- Tip into silicone moulds and put in the fridge to set.
- The marzipan holly decorations can be prepared in advance, or you can get something ready made to save time.
- Once the puddings are set, pop them out of the moulds. Melt the white chocolate to decorate and top with the marzipan holly.
